Recipe of the Week: Pumpkin Chocolate Chip Loaf

 

Ingredients:

  • 3 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 1 1/2 tablespoons cinnamon
  • 1 teaspoon nutmeg
  • 3/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
  • 1/2 teaspoon cardamon
  • 2 cups pumpkin puree
  • 4 eggs
  • 1 cup vegetable oil
  • 3/4 cup water 1 bag mini chocolate chips

Instructions:

Step 1: Sift together all dry ingredients  (flour, sugar, spices, baking soda, salt, spices)

Step 2: Whisk in eggs, oil, and water

Step 3: Fold in pumpkin puree until evenly combined

Step 4: Add in chocolate chips

Step 5: Preheat oven to 300 degrees, Grease, and pour into a medium-sized pan. Pan should be close to full, leaving about 1/2 an inch of space

Step 6: If desired, Sprinkle extra chocolate chips over top before baking

Step 7: Bake for 1 hour and 15 minutes, or until a toothpick comes out clean

Step 8: Let cool before slicing.
